Matured in lightly charred or steamed barrels, many of them sourced from local wineries producing top Shiraz, Cabernet and Pinot Noir, some filled fresh while still wet with wine. Each batch is aged separately under Melbourne’s wildly changeable climate before being expertly blended. The result? Silky smooth whisky with hints of spiced vanilla, tropical fruits and cereal notes, all rounded out by juicy red apples and berries – a whisky that’s full of character and unmistakably Aussie.
